AVOCADO SALAD
Serves 4
This is such a decadant salad for avocado lovers. Please
don't even try to count the calories!
4 slices bacon
4 Tbsp red wine vinegar
12 Tbsp vegetable oil
2 tsp salt
Freshly ground pepper
4 tsp minced shallots or onion
12-16 ripe cherry tomatoes, cut in halves
2 chilled ripe avocados, pulp diced
crisp salad greens
Fry the bacon until crisp, then crumble and set aside. Whisk
together the vinegar, oil, salt, pepper and the shallots or
onion. Pour some of the dressing over the avocado pieces and
tomato halves, and toss gently. Toss salad greens with a little
of the dressing. Put on a salad plates. Then put the avocado/tomato
mixture in a pile on the salad. Then sprinkle with bacon bits.
