BEEF STIFADO (GREEK STEW)
This is a VERY flavorful, tender greek stew (slightly tangy).
I love to serve it with a Greek salad and stuffed pita bread.

Serves 8
2 ½ lbs lean stewing beef, trim fat and cut into bit size
chunks
1 onion, chopped
3 cloves garlic, minced
1 Tbsp brown sugar
½ cup dry red wine
½ cup water
3 Tbsp tomato paste
¼ cup balsamic vinegar
1 tsp salt (and more to taste at the end)
1 tsp mixed pickling spices and 4 whole cloves enclosed in
a tea ball or cheesecloth bag.
Toss all ingredients into a pot and stir (or crock pot).
Cover and simmer on lowest setting for 2 ½ - 3 hours (crock
pot low for 8 hours) stirring occasionally. Remove spice packet
before serving. Serve in small bowls or ramekins.
