BROCCOLI WITH LEMON AND GARLIC Serves 6 2 lbs broccoli, trimmed and cut into spears, the stems reserved for another use 3 Tbsp butter (I use olive oil for heath reasons) fresh lemon juice to taste (I use about 1 tsp) freshly grated lemon zest of one lemon minced garlic (I use the bottled so I use a lot) Steam broccoli until crisp-tender. In a skillet, heat butter (or oil), garlic, lemon juice and lemon zest over moderate heat until the foam subsides, toss in broccoli until it is coated well. Salt and white pepper to taste. A YUMMY WAY TO GET YOUR VEGES!
