CARRIBBEAN BLACK & WHITE BEANS
Serves: Makes about 5 cups of beans
This is a very flavorful dish with fresh ginger, mango juice
and wonderful spices.
1 1/2 cups chopped onions
3 cloves garlic, minced
2 Tbsp olive oil
1 Tbsp freshly grated ginger root
1 tsp fresh thyme (or 1/2 tsp dried thyme)
1/2 tsp ground allspice
1 can black beans, drained
1 can white beans, drained (or you can use another can of
black beans, if you like a strong black bean flavor)
1 11 oz can mango juice
Salt and Pepper to taste
In a heavy pan, saute onions, garlic and spices in oil for
5 minutes. Add juice and beans and cook on low, stirring occasionally,
until desired texture.
