CANDIED PECAN GREEN SALAD
Serves 6
Guests LOVE this salad! Almost all ask for the recipe.
Mixed baby greens - one big handful per serving
2 Tbsp. Sugar
1/4 Cup Chopped Pecans
1/8 Cup Finely Diced Red Onions (or Green Onions, chopped)
1/4 Cup Dried Cranberries
Dressing:
1/4 Cup Oil
1 1/2 Tbsp. Sugar
2 Tbsp. Balsamic Vinegar
1/4 Tsp. Salt
Pinch Black Pepper
Prepare lettuce into salad. Wisk dressing ingredients together.
Caramelize sugar and pecans in a small skillet over medium
heat until golden. Pour into an oiled pan. Cool. Break apart
into bite sized pieces. Just before serving, toss the lettuce
with the pecans, onions and cranberries. Toss again with the
dressing.
