GERMAN POTATO SALAD
Serves 8 - 10
I just love warm German Potato Salad! It is nothing like
the American Mayonnaise type of salad. Try it with a lovely
German meal.
10 slices bacon
3 Tbsp flour
1/3 cup chopped red onion
2/3 cup water
2/3 cup white wine vinegar
1/3 cup sugar
2 tsp salt
1/2 tsp ground black pepper
1 tsp powdered dry mustard
1 tsp horseradish sauce
2 quarts cooked diced potatoes (I like the red ones for this)
1/2 cup chopped fresh parsley
Fry bacon until crisp. Remove from pan, drain and crumble
(leave bacon fat in pan). Add flour and onion to the bacon
fat left in the pan. Stir in vinegar, water, sugar, salt,
mustard and horseradish. Cook until mixture is of medium thickness.
Add to potatoes, parsley and crumbled bacon. Mix carefully
to prevent mashing the potatoes. Serve warm (you can make
ahead and rewarm).
