GREEN RICE CASSEROLE

Serves 8 - 10

This is an easy, yummy side dish that goes with a lot of entrees.

2 cups cooked rice, cold

2 eggs, beat well

2 cups milk

2 cups grated cheese

1 cup chopped fresh parsley

1/2 oil

1/2 cup chopped onion

1 tsp salt

1/4 tsp dry mustard

Mix all together. Sprinkle lightly with paprika. Bake 1 hour at 350 degrees.
