GERMAN SWEET-AND-SOUR RED CABBAGE
Serves 6
This is a lovely side dish to a German meal.
1/4 cup (1/2 stick) butter (I use more)
2 1/2 pound red cabbage, thinly sliced (about 12 cups)
4 Tbsp sugar
2/3 cup balsamic vinegar
3 Tbsp Triple Sec liquer
Raisens (optional - but I love them in it)
Melt butter in large pot over medium heat. Add cabbage and
saute until slightly wilted, about 5 minutes. Add sugar and
toss to coat evenly. Add vinegar, Triple Sec and Raisens.
Reduce heat to low, simmer covered, until cabbage is tender
stirring often, about 30 minutes. Season to taste with salt
and pepper.
