LINGUINE WITH WHITE CLAM SAUCE
Serves 4
This is very rich and very good!
½ Lb. Linguine
1 Cup ½ & ½
5 Tbsp Butter
1/8 tsp Nutmeg,
4 oz Cream Cheese
1 Tbsp Dried Basil
1 Tbsp Dried parsley
1 clove Garlic, minced
Dash of red pepper flakes
½ Cup Parmesan cheese, grated and divided in half
2 (5 ½ oz) cans minced clams (add juice to cream mixture)
Prepare linguine and drain. In a pan, combine ½ & ½ , clam
juice, butter and nutmeg. Simmer 8 - 10 minutes or until lightly
reduced. Add cream cheese, herbs and garlic. Stir until blended,
use back of spoon. Just before serving, add ¼ cup of parmesan
cheese and drained clams. Stir and cook 2 -3 minutes. Add
drained pasta, toss to coat. Garnish with remaining cheese
and some fresh parsley.
