POTATO CASSEROLE
Serves 8
This is a delicious potato casserole that is moist and flavorful.
3 - 4 large baking potatoes, baked until tender, then peeled
and chopped (5 to 6 cups of potato)
2 Cups cottage cheese (nonfat or lowfat OK)
1 Cup sour cream (lowfat is OK)
4 green onions, with tops, finely chopped
1 clove garlic, minced (I use more)
½ tsp salt
1 tsp Paul Prudhomme chicken magic (or favorite seasoned salt)
½ tsp pepper
3 Tbsp flour (important)
1 ½ cup shredded Cheddar cheese (set aside)
Mix all (except cheese) together. Place in 9 X 13 greased
baking dish. Bake 350 degrees for 30 - 40 minutes (until done).
Top with cheese and let rest 5 to 10 minutes before serving.
Note: you may boil and drain potatoes, rather than bake them.
