RICE PILAF
Serves 8
Not gourmet - just great comfort food!
2 Tbsp butter
1 loop vermicelli (or angel hair pasta), broken up into little
pieces
1 cup long grain white rice
1 can chicken broth
1 Tbsp dried chicken broth
Salt and pepper
Melt butter in heavy saucepan. Add vermicelli and brown
on low heat, stirring constantly to prevent burning. Add rice
and stir. Add chicken broth plus ¼ cup water. Add dried chicken
broth. Salt and pepper to taste. Cover and simmer as low as
possible for about 20 minutes or until all the liquid has
been absorbed. Fluff with fork before serving.
