SHREDDED POTATO CASSEROLE
Serves 8 - 10
This delicious potato side dish is so good and naughty!
1 onion, chopped
10 slices of bacon, chopped
2 cloves garlic, minced
One 2 lb pkg frozen hash brown potatoes
1 pint sour cream
2 (10.75 ounce) cans condensed cream of chicken soup
1 cup grated cheddar cheese (I use more)
1/4 tsp ground black pepper
1 Tbsp hot pepper sauce
1 ounces butter
4 ounces butter round crackers, crushed (I use more)
Preheat oven to 350 degrees F. Grease 8 X 12 inch baking
dish. In large pan, saute onion, bacon and garlic until onions
are translucent and bacon cooked. Add hash browns, stirring
well. Cook until potatoes are hot. Remove from heat and add
sour cream, soup, cheese, pepper and hot sauce. Mix well and
our into baking dish. In a saute pan, heat butter and crackers.
Cook until golden brown. Sprinkle over casserole and bake
for 30 mintues until hot and bubbly.
