SHRIMP TERRELLS (CAJUN) OR BBQ'D SHRIMP
Shrimp Terrells make a spicy, scrumptious dinner when served
over rice pilaf and with a side of BBQ beans. They can also
be an appetizer all by them selves. A guest from Alaska gave
us this recipe.
Jumbo shrimp (16-20 count)
Jalapeno peppers, cut into thin strips (wear gloves)
thin strips Pepper jack cheese or jack cheese
Bacon (must be the thinnest you can buy!!) cut in thirds or
halves depending on how long the bacon is
Cajun BBQ Sauce
Butterfly the shrimp (cut open lengthwise but don't cut
through). Place a thin strip of cheese and pepper inside.
Wrap bacon around and secure on a thin wooden skewer that
has been soaked in water. Cover with Cajun BBQ sauce and BBQ
with high heat (doesn't take long just a couple of minutes
per side).
