TEQUILA LIME CHICKEN WRAPS
Serves 4
We like to set up a buffet bar and let everyone build their
own wraps. We set out guacamole, sour cream, cheese, lettuce,
fresh mango salsa, black beans (for the vegetarians), olives,
rice and whatever else sounds good.
6 chicken thighs, boneless, skinless
2 cups water
2/3 cup thick teriyaki glaze (not marinade)
4 Tbsp lime juice
4 tsp minced garlic
1 tsp liquid smoke
1 tsp salt
½ tsp ground ginger
3 Tbsp Tequila
Mix all ingredients in pot on stove. Bring to boil. Cover
and reduce to low and simmer until very, very tender. Then
take the meat out and slice (shred) it and stir it back into
the sauce and cook uncovered until thick.
For wraps, heat tortillas in a skillet with a little oil.
Serve all ingredients separately and let all assemble.
