TROPICAL RICE

Serves 6

This is a lovey, simple twist on rice for a island type meal.

2 cups uncooked white rice
1 can coconut milk
1 can chicken broth

Mix coconut milk and chicken broth in pot with lid. Add rice and cook covered until rice is done. Fluff with fork.

Variateion: You can add Toasted coconut or Mango salsa
