TOMATO VODKA SAUCE FOR PASTA
Serves 8
This is a unique creamy, tomato sauce with a hint of vodka.
I like it for a little variety.
1 Tbsp butter
1 Tbsp olive oil
1 onion, chopped
1 Tbsp chopped garlic
1 (28 ounce) can peeled and diced tomatoes
1 can heavy whipping cream (or substitute 3/4 cup half and
half and 1/4 cup cream cheese)
1/4 tsp crushed red pepper flakes or substitute a little
hot sauce
1/2 cup vodka
salt and pepper to taste
1 lb pasta
1/2 cup grated parmesan cheese
In a large skillet over medium heat, melt butter and oil.
Add onion and garlic and saute until onion transparent. Add
tomatoes and cook for 25 minutes, stirring frequently. Add
cream, vodka and hot sauce or pepper flakes. Cook until desired
consistency. Cook pasta then drain and serve with sauce and
parmesan cheese. For variation, you may add prosciutto or
Italian herbs.
